waffle origin

The waffles date from the Middle Ages. At that time Saint Louis founded a fraternity called the oubliyeurs or oubloiers meaning forgetters.

They baked the biscuit between two cast iron plates connected by hinges, the plates often decorated with coat-of-arms or religious inscriptions and images, and a wooden arm to hold it. The cone shape waffles were sometime stick.
They use to sell them at the church’s gate, on sunday.During the week they sold them shouting on the street.
To become part of the fraternity one must be able to bake a thousand wafers a day.

A blacksmith invented a iron plate looking like honeycombs “gafrum”.

The waffles are from Belgium invented 600-year ago. It was invented by the chef of the prince-bishop of Liège, a city
in eastern Belgium. From there the popularity kept growing many villages created their own waffle variation based on the Liège waffle recipe.
A popular variant is the so-called Belgian waffle is in fact the Brussels waffle.
The Belgian Waffle was introduced into North America during the 1964 New York World’s Fair.
