Hot fudge sauce

This is a dark fudgy bittersweet sauce that firms up on the waffle.
You can also use semi-sweet or a Callebaut White Chocolate

if your prefer.

Ingredients

5/8 cup bittersweet chocolate Cote D’or Noir De Noir
3 tbsp unsalted butter
2/3 cup water
1/3 cup sugar
6 tbsp corn syrup
Pinch salt
1 tbsp vanilla extract

Preparation

Melt the chocolate and butter very slowly in a double boiler or in the microwave, stirring frequently until combined.
Meanwhile, heat the water to boiling in a heavy saucepan. When the butter and chocolate have melted, stir the mixture into the boiling water. Add the sugar,
corn syrup the salt and mix until smooth. Turn the heat up and stir until mixture starts to boil; adjust heat so that sauce is just maintained at the boiling point,
stirring occasionally. Allow sauce to boil for 9 mn.

Remove from heat and cool for 15 mn. Stir in the rum and serve warm over waffles ice cream.

Nota bene: Sauce can be easily reheated in the microwave for 15 to 30 seconds. Stir and it will be shiny.

Thanks for your hot fudge recipe Sam.

This one is a bit different, however very easy to make.
